Gluten Free Pumpkin Nut Muffins

This recipe is sweetened with apple juice concentrate.
Preheat oven to 375° F
Thoroughly grease 12-cup muffin pan (or use paper muffin liners)
1 3/4 cup Tree Street Grains Gourmet Gluten Free flour, sifted
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
1/4 tsp ginger
2 large eggs, beaten
1/3 cup buttermilk
½ tsp vanilla extract
3/4 cup frozen unsweetened apple juice concentrate, thawed
1 c canned pumpkin
1/4 cup chopped pecans, optional
Combine flour, baking soda, baking powder, cinnamon, nutmeg, and ginger.
Combined eggs, buttermilk, vanilla, apple juice concentrate, and pumpkin and add to dry ingredients. Stir unto just moistened. Fold in nuts.

Bake for 20 minutes or until toothpick comes out clean.

Glutin Free Banana Bread

Preheat oven to 350° F
Grease 4 ½ x 8 ½ – inch bread pan
Place in blender:
3 Tbsp oil
½ tsp salt
1/3 cup sweetener (sugar, brown sugar, honey, maple syrup, etc.)
2 eggs
3 bananas (moderate to large)
Mix in blender until smooth.
Add:
1 ½ cups Tree Street Grains Gourmet Gluten Free flour, sifted
1 tsp baking soda
With butter knife stir flour into banana mixture in the blender. Pulse and then stop and stir and pulse until smooth.
Pour into greased bread pan.

Bake 1 hour
Turn out on rack to cool.

Gluten Free Date Nut Muffins

Preheat oven to 400° F
Thoroughly grease muffin pan (or use paper muffin liners).
Combine:
2¼ cups Tree Street Grains Gourmet Gluten Free flour, sifted
¼ cup chopped dates
¼ cup chopped walnuts (optional)
1 Tbsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp allspice
In a separate bowl beat:
2 med. eggs
Then add to the eggs:
½ cup granulated sugar
1 cup whole milk (or soy, almond or rice milk)
1 tsp pure vanilla extract
Gradually add:
1 stick (4 oz.) melted butter which is at room temperature or 1/4 cup shortening
Add the liquid ingredients to the dry ones and mix together but don’t over mix.
Let the batter stand about 5 minutes to allow the moisture to blend in
with the batter.
Fill muffin tins 2/3rds full. Because of the whole grains in the flour, the muffins will not raise as much as all purpose flour.

Bake for 15 to 20 minutes.

Gluten Free Apple Cake

Preheat oven to 350° F
Grease a 9 x 13-inch baking pan & nbsp;
Cream together:
1 cup brown sugar
1 cup softened butter & nbsp;
Then mix in and blend:
2 ½ cups unsweetened apple sauce & nbsp;
In a separate bowl blend together:
2 ½ cups sifted Tree Street Grains Gourmet Gluten Free Flour
2 tsp baking soda
½ tsp salt
1 tsp cinnamon
1/4 tsp nutmeg & nbsp;
Blend all together well and spread evenly in a prepared cake pan.
Bake for 45 minutes or until toothpick comes out clean.
Remove from oven and cool in pan on rack. Enjoy with whipping cream or cream cheese frosting.

Gluten Free Brownies

Preheat oven to 400° F
Lightly oil an 8×8 baking pan
Combine in the top of a double boiler over simmering water:
1/2 cup vegetable oil
4 ½ ounces Semi-sweet chocolate, until chocolate is melted and smooth
While the chocolate is melting, blend together and put aside:
3/4 cup + 3 Tbls Sifted Tree Street Grains Gourmet Gluten Free flour
½ cup sugar
1 tsp baking powder
Beat and then add to the chocolate:
3 beaten eggs at room temperature
1 tsp vanilla
Gradually beat into the chocolate mixture the flour mixture.
Then spread in prepared pan.
Bake for 12 – 15 minutes
